If you’re into bold, spicy flavours, this Szechuan chicken noodle stir fry is made for you. Powered by Blazing’s Szechuan-style sauce, this dish packs serious heat and savoury depth — the kind that leaves you reaching for seconds. With tender chicken, vibrant vegetables, and thick noodles, it’s a weeknight dinner that tastes like a weekend treat.
Ingredients
2 chicken breasts, thinly sliced
2 nests of medium egg noodles
1 tbsp vegetable oil
1 red bell pepper, sliced
1 small onion, sliced
2 garlic cloves, minced
3 tbsp Blazing Szechuan Sauce or Chilli Garlic Sauce
1 tbsp soy sauce
Spring onions and sesame seeds (optional garnish)
Method
Cook the Noodles:
Boil the noodles according to packet instructions (usually 4–5 minutes). Drain and set aside.
Stir-Fry the Chicken:
Heat 1 tbsp vegetable oil in a wok. Add the chicken and cook for 5–6 minutes until browned and cooked through.
Add Veg & Sauce:
Toss in the sliced onion, red pepper, and minced garlic. Stir-fry for 2–3 minutes. Add 3 tbsp Blazing Szechuan Sauce and 1 tbsp soy sauce, then stir well.
Combine with Noodles:
Add the drained noodles and stir everything together over medium heat until fully coated and piping hot.
Serve:
Garnish with spring onions and sesame seeds if desired.
